Pancit Laksa Recipes
Pancit Laksa is a fusion dish combining the flavors of Filipino pancit and the aromatic spices of Malaysian laksa. Here’s a recipe to create Pancit Laksa:
Ingredients:
For the Laksa Paste:
- 4 dried red chilies, soaked in hot water and deseeded
- 3 shallots, peeled and chopped
- 3 cloves of garlic, peeled and chopped
- 2 stalks of lemongrass, white part only, chopped
- 1-inch piece of ginger, peeled and chopped
- 1 tablespoon of ground coriander
- 1 teaspoon of ground turmeric
- 1 teaspoon of shrimp paste (optional)
- 2 tablespoons of vegetable oil
For the Pancit Laksa:
- 250 grams of rice vermicelli noodles, soaked in hot water until softened
- 200 grams of chicken breast, thinly sliced
- 200 grams of shrimp, peeled and deveined
- 200 grams of tofu, cubed
- 1 cup of bean sprouts
- 1 cup of coconut milk
- 4 cups of chicken or vegetable broth
- 2 tablespoons of fish sauce
- 1 tablespoon of brown sugar
- Salt to taste
- Hard-boiled eggs, halved, for serving
- Lime wedges, for serving
- Fresh cilantro leaves, for garnish
- Fried shallots, for garnish
Instructions:
- In a blender or food processor, combine all the ingredients for the laksa paste and blend until smooth.
- Heat the vegetable oil in a large pot over medium heat. Add the laksa paste and cook for 2-3 minutes until fragrant.
- Add the chicken breast slices to the pot and cook until they start to brown.
- Add the shrimp and tofu to the pot and cook for another 2-3 minutes until the shrimp turns pink and opaque.
- Pour in the chicken or vegetable broth and coconut milk. Stir well to combine.
- Season with fish sauce, brown sugar, and salt to taste. Allow the broth to simmer for 10-15 minutes to allow the flavors to meld together.
- Add the softened rice vermicelli noodles and bean sprouts to the pot. Cook for another 2-3 minutes until the noodles are heated through.
- Ladle the Pancit Laksa into bowls. Top with halved hard-boiled eggs, lime wedges, fresh cilantro leaves, and fried shallots.
- Serve hot and enjoy the aromatic flavors of Pancit Laksa!
