Pancit Sotanghon Recipes

Here’s a recipe for Pancit Sotanghon, a Filipino noodle dish made with glass noodles (also known as cellophane noodles or bean thread noodles):

Ingredients:

  • 250 grams of sotanghon (glass noodles)
  • 2 tablespoons of cooking oil
  • 4 cloves of garlic, minced
  • 1 onion, sliced
  • 2 cups of cooked chicken breast, shredded
  • 1 cup of cooked pork belly or pork shoulder, sliced into thin strips
  • 1 cup of shrimp, peeled and deveined
  • 2 cups of mixed vegetables (carrots, cabbage, bell peppers, snow peas, etc.), julienned or sliced
  • 3 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 2 cups of chicken or vegetable broth
  • Salt and pepper to taste
  • Calamansi or lemon wedges for serving
  • Chopped green onions for garnish

Instructions:

  1. Soak the sotanghon (glass noodles) in warm water for about 10-15 minutes until they are soft but not mushy. Drain and set aside.
  2. Heat the cooking oil in a large pan or wok over medium-high heat.
  3. Sauté the minced garlic until fragrant, then add the sliced onions and cook until they become translucent.
  4. Add the cooked chicken, pork, and shrimp to the pan. Stir-fry for a few minutes until the shrimp turns pink and opaque.
  5. Add the mixed vegetables to the pan. Stir-fry until the vegetables are slightly tender but still crisp.
  6. Push the meat and vegetables to one side of the pan and add the soaked sotanghon (glass noodles) to the empty space.
  7. Pour the soy sauce, oyster sauce, and chicken or vegetable broth over the noodles and meat. Toss everything together until well combined.
  8. Season with salt and pepper to taste. Adjust the seasoning according to your preference.
  9. Continue to cook for another 3-5 minutes, stirring constantly, until the noodles are heated through and well-coated with the sauce.
  10. Transfer the Pancit Sotanghon to a serving platter.
  11. Garnish with chopped green onions and serve hot with calamansi or lemon wedges on the side.
