Pancit Bihon Recipes

Here’s a recipe for Pancit Bihon, a classic Filipino noodle dish:

  • 250 grams of bihon (rice noodles)
  • 2 tablespoons of cooking oil
  • 4 cloves of garlic, minced
  • 1 onion, sliced
  • 2 cups of chicken breast, sliced into thin strips
  • 1 cup of shrimp, peeled and deveined
  • 1 cup of Chinese sausage (optional), sliced diagonally
  • 1 small carrot, julienned
  • 1 small cabbage, shredded
  • 2 cups of chicken broth
  • 3 tablespoons of soy sauce
  • Fish sauce (patis) to taste
  • Ground black pepper to taste
  • Calamansi or lemon wedges for serving
  • Chopped green onions for garnish

  1. Soak the bihon (rice noodles) in warm water for about 10-15 minutes or until they are soft but not mushy. Drain and set aside.

  2. In a large pan or wok, heat the cooking oil over medium-high heat.

  3. Sauté the minced garlic until fragrant but not browned.

  4. Add the sliced onions and cook until they become translucent.

  5. Add the sliced chicken breast and cook until they are no longer pink.

  6. Add the shrimp and Chinese sausage (if using) to the pan. Cook until the shrimp turns pink and opaque.

  7. Add the julienned carrot and shredded cabbage to the pan. Stir-fry until the vegetables are slightly tender but still crisp.

  8. Push the meat and vegetables to the side of the pan and add the soaked bihon (rice noodles) to the empty space.

  9. Pour the chicken broth and soy sauce over the noodles and meat. Toss everything together until well combined.

  10. Season with fish sauce (patis) and ground black pepper to taste. Adjust the seasoning according to your preference.

  11. Continue to cook for another 3-5 minutes, stirring constantly, until the noodles are heated through and well-coated with the sauce.

  12. Transfer the Pancit Bihon to a serving platter.

  13. Garnish with chopped green onions and serve hot with calamansi or lemon wedges on the side.
