Pancit Pad Thai Recipes

Pancit Pad Thai is a fusion dish inspired by the classic Thai dish Pad Thai but with Filipino pancit noodles. Here’s a recipe for Pancit Pad Thai:


  • 250 grams of pancit noodles (you can use bihon or canton noodles)
  • 2 tablespoons of cooking oil
  • 2 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 200 grams of chicken breast, thinly sliced
  • 200 grams of medium-sized shrimp, peeled and deveined
  • 1 cup of firm tofu, diced
  • 2 eggs, lightly beaten
  • 1 cup of bean sprouts
  • 1/4 cup of chopped peanuts
  • 2 stalks of green onions, chopped
  • 2 tablespoons of fish sauce
  • 2 tablespoons of tamarind paste
  • 2 tablespoons of brown sugar
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of chili flakes (adjust to taste)
  • Lime wedges for serving


  1. Cook the pancit noodles according to package instructions until they are al dente. Drain and set aside.
  2. In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, soy sauce, and chili flakes. Set aside.
  3. Heat the cooking oil in a large pan or wok over medium-high heat. Add the minced garlic and chopped onion. Stir-fry until fragrant and the onions are translucent.
  4. Add the sliced chicken breast to the pan and cook until it’s no longer pink.
  5. Push the chicken to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until they’re fully cooked.
  6. Add the shrimp and diced tofu to the pan. Cook until the shrimp turns pink and opaque.
  7. Add the cooked pancit noodles to the pan along with the sauce mixture. Toss everything together until the noodles are evenly coated with the sauce.
  8. Add the bean sprouts to the pan and toss briefly until they are just wilted.
  9. Remove the pan from heat and sprinkle chopped peanuts and green onions on top.
  10. Serve Pancit Pad Thai hot with lime wedges on the side for squeezing over the noodles.
