Pancit Me Goreng Recipes

Pancit Me Goreng is a fusion dish that combines the flavors of Indonesian Mie Goreng with Filipino pancit. Here’s a recipe to create Pancit Me Goreng:

Ingredients:

  • 250 grams of pancit noodles (you can use bihon or canton noodles)
  • 2 tablespoons of vegetable oil
  • 4 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 200 grams of chicken breast, thinly sliced
  • 200 grams of medium-sized shrimp, peeled and deveined
  • 2 eggs, lightly beaten
  • 1 cup of mixed vegetables (carrots, cabbage, bell peppers, snow peas, etc.), julienned or sliced
  • 3 tablespoons of soy sauce
  • 2 tablespoons of kecap manis (sweet soy sauce)
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of sambal oelek or chili paste (adjust to taste)
  • 1 teaspoon of ground coriander
  • Lime wedges for serving
  • Chopped green onions for garnish
  • Fried shallots for garnish
  • Hard-boiled eggs, halved, for serving (optional)

Instructions:

  1. Cook the pancit noodles according to package instructions until they are al dente. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the minced garlic and chopped onion to the pan. Stir-fry until fragrant and the onions are translucent.
  4. Add the sliced chicken breast to the pan and cook until it’s no longer pink.
  5. Push the chicken to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until they’re fully cooked.
  6. Add the shrimp and mixed vegetables to the pan. Cook until the shrimp turns pink and opaque.
  7. Add the cooked pancit noodles to the pan along with the soy sauce, kecap manis, oyster sauce, sambal oelek, and ground coriander. Toss everything together until the noodles are evenly coated with the sauce.
  8. Continue to cook for another 3-5 minutes, stirring constantly, until the noodles are heated through and well-coated with the sauce.
  9. Transfer the Pancit Me Goreng to a serving platter.
  10. Garnish with chopped green onions and fried shallots. Serve hot with lime wedges on the side.
